Another month, another 31 days of opportunity and inspiration!
At least that’s what I keep telling myself… Post-grad is full of uncertainty, especially as I continue to figure out what it is I’m doing with my life.
This series of posts (things to get inspired by/monthly favorites) is meant to share a glimpse into my life and post-grad journey, and all the little and big things that I find joy and inspiration in.
This month happens to include a lot of food, which I am not mad about! I love discovering new eateries, trying new recipes, and sharing quality time with friends and family through food experiences.
That being said, grab inspiration from this list, take note of what brings you joy, and plan out your next endeavor!
9 OCTOBER FAVORITES
1. amylu Apple & Gouda Chicken Burgers from Costco
I have been LOVING Costco lately. The samples, the food court, the huge sizing – it’s all so good, especially for the prices. One of my recent finds is these amylu apple & gouda chicken burgers. You can eat them over rice or with veggies, but I prepared them in the air fryer and stuck it in a bun with ALL the fixings. These are juicy, flavorful, and the perfect size. Honestly, they rival the classic beef burger.
2. Homemade Pasta
I made homemade pasta for the first time and I think it was so worth it! We have a pasta maker attachment for our KitchenAid, and it worked perfectly. But if you have a separate pasta machine, that’ll certainly work as well! Do this as a fun gathering activity – it’ll get everyone involved and you’ll be left with a delicious meal. Since it was October, we made a pumpkin vodka pasta sauce to go along with it. It was so satisfying to put the dough through the machine and the noodles came out perfectly soft, but still al dente. I know it takes some extra effort, but it’s an easy, therapeutic activity perfect for girls’ night or date night, and the product is well worth the work. If you’re looking for a new foodie endeavor, let this be your inspiration to make pasta from scratch.
3. Miso Eggplant
If you haven’t had miso eggplant… please try it. Even if you don’t like miso or you don’t like eggplant. Now I’ve had miso eggplant before, and I’ve always liked it. But for some reason this one I had at a local restaurant here in Hawaii really hit the spot. They were soft and sweet, and a little nutty from the sesame. Chef’s kiss! I’ll have to try to make it myself one day.
4. Pumpkin Spiced Pumpkin Seeds from Trader Joe’s
These are truly one of the most pleasant surprises I’ve had in a while. Living in Hawaii, we are DEPRIVED of Trader Joe’s. I know, it’s sad. So when we go to the mainland, we stock up on all the goodies. The only unfortunate thing is we can’t bring back any of the frozen foods or perishables, which is heartbreaking because their frozen foods are top tier! Anyway, we get what we can, and one of the things that made it on the journey home were these pumpkin spiced pumpkin seeds. I already love pumpkin seeds, but these are basically like candied seeds! They don’t necessarily taste pumpkin spiced, but they are the perfect sweetness and crunch. Add it to salads, muffins, breads, and literally anything you can think of. They’re so delicious.
5. Apple Cake with Brown Sugar Crumble by Maddie & Jules
New favorite dessert alert! And absolutely perfect for fall. I originally saw this recipe on TikTok and knew I had to try it. Boy did it not disappoint! Not only is it so easy to make, but it has the moistest crumb, a buttery crumble, and the sweet apples studded throughout are just perfect. Eat it for breakfast, dessert, or both! I promise, you’re going to be making and eating this constantly once you try it for the first time. This is your sign to try. that. TikTok recipe!
6. Gilmore Girls
Tis’ the season for rewatching Gilmore Girls! Maybe it’s basic, but I love this show. It’s feel good, witty, and easy to watch, with just enough comedy and drama sprinkled in. Not to mention, there’s a full seven seasons to binge! I’ve been watching this show during meals, while I’m exercising, and in the background while doing work. Also, I have to shoutout this picture – it was filmed at my college campus. How cool!

7. Disney Channel Halloween Episodes
For me, Disney = nostalgia. Since it’s spooky season, Halloween shows and movies are the go-to! I’m not a huge horror movie gal, but I do appreciate a comedy or spine-chilling show. Of course there’s classics like Hocus Pocus and The Nightmare Before Christmas, but I recommend checking out Disney Channel Halloween episodes! These will bring you right back to your childhood. If you have Disney+, they have a whole collection of these episodes already sorted out for you. Get re-inspired by the creativity, goofiness, and innocence of these spooky-inspired episodes.
8. Multiseed Rice Crackers with Tamari Soy Sauce from Trader Joe’s
Trader Joe’s does it again. I’m pretty sure these are available all year round, but I have recently re-discovered them and they are fantastic! The perfect savoriness and snap, but just neutral enough that it would go great with any dip. I’ve personally been eating them with hummus! They’re ideal for your afternoon snack, girl dinner, or new savory addiction. If TJ’s is out of your way, order from Amazon right now!
9. Garage Sales
We had a garage sale with our family friends this month and I have many thoughts. They’re fun to sit through, it’s interesting to see who comes by, and it’s nice for making a little extra cash. Although I must say, it’s quite a bit of work for not much money, and it is a bit painful to list good items for such a cheap price. On the other hand, attending garage sales is a steal! You can find amazing things for incredible prices, and it’s interesting to see all the items and knick knacks that people are selling.
Anyway, it’s a good time doing it with friends and family; if anything, it forces you to clean out your house. It was a fun experience overall, and if you have a handful of items you can pull together, I recommend organizing one with your friends!
